There’s no shame in eating vegetables in different forms, so if anyone ever tries to shame you for doing so, hold your head high. You’re not trying to trick your kids. You’re doing the best you can to maximize the nutrition they get via the meals you serve them. Simple as that. The more vegetables, the better. There’s as much room on our kids’ plates for somewhat hidden, shredded veggies as there is for raw vegetables or roasted vegetables or steamed vegetables that aren’t disguised in the least.

Let’s rethink vegetables and how we serve them to our kids. No judgement, just more vegetables. Speaking of new ways to serve vegetables, who says vegetables and chocolate don’t go together? When I make these Double Chocolate Peanut Butter Muffins made with 1 cup of vegetables inside, my kids will beg to differ with you. I say, embrace it. Embrace eating vegetables in whatever form you can.

My kids eat and love a lot of different vegetables, but zucchini isn’t normally one of them. They will sometimes eat them raw, but they don’t enjoy the texture of cooked zucchini. Trust me, I’ve prepared zucchini for them many different ways, and baking it into a breakfast treat is by far their favorite.

This Zucchini Chocolate Chip Baked Oatmeal has a soft, creamy texture, and you barely notice the zucchini among the melted chocolate chips. The chocolate chips make this plenty sweet, so it only needs a touch more maple syrup. The result is a divine breakfast you’re kids will probably beg you to make over and over! Zucchini Chocolate Chip Baked Oatmeal

Ingredients
  • 3 cup – oats, dry
  • 1 1/2 teaspoon – baking powder
  • 1/2 teaspoon – salt
  • 2 cup – almond milk, unsweetened
  • 1/4 cup – maple syrup, pure
  • 1 large – egg
  • 2 cup – zucchini
  • 1/2 cup – chocolate chips, dark
Directions
  1. Preheat your oven to 375 degrees.
  2. Lightly grease a medium baking dish and set aside.
  3. In a large bowl, mix together the first 6 ingredients.
  4. Add 2 cups shredded zucchini and then stir in the chocolate chips.
  5. Transfer the mixture to the baking dish and bake in the preheated oven for 20 minutes. Enjoy!
