Summer is always such a busy time during the day. I never want to stop what I am doing and make a big whoopy doo over lunch. If you have 5 or 6 go-to lunch ideas, then you can rotate them through the week and always have a quick and easy lunch to whip up. This healthy lunch idea is definitely going to be on your go-to list.
I love wraps. My kids love wraps. But the problem is that wraps can be difficult for kids to eat. All the stuff ends up falling out, and the tortilla might start to break and then everything will fall out. First step is to find a tortilla. This is a very important step because you have to find the right tortilla. My criteria is that it is super soft. One that will bend. One that will fold. But it won’t crack. Try a few different brands until you find the ‘perfect’ tortilla. You can also warm your wrap slightly in the microwave, for about 1o seconds, to make it more pliable and less breakable.
If it is large, cut it in half.
For the savory turkey wrap, spread a generous amount of low-fat plain cream cheese on the tortilla.
For the sweet wrap, spread low-fat strawberry cream cheese on the tortilla.
Layer with some quality thin sliced deli turkey.
For the savory wrap, take a cucumber and peel some slices so they are very thin.
You can do this with carrots also. I added some diced red pepper. You can add any veggie you want, just make sure it is either sliced thin, or diced small. The great thing about these is that your kids can help make it and choose what they want on the wrap. They are much more likely to eat it if they were involved in the making.
For the sweet wrap, layer with thinly sliced strawberries. (Don’t be freaked out – seriously this was delicious!) Try it, I promise you won’t regret your decision to branch out.

This is the key element to the wrap not falling apart. Begin rolling the tortilla from one end, and spread a small amount of cream cheese as you roll it to act as the wrap ‘glue’.
Continue wrapping and spreading until you have a tight little roll.
Cut in half or thirds, and serve it up. Power packed with protein, and vitamins and minerals. This is a great on the go lunch as well. Packs nicely in a tupperware to take hiking, swimming, a sports game, the park…….you know where I am going with this.
