Holiday Lunch Fun: Hot Pockets

Whenever my kids are home from school, like today (for Presidents Day), we like to get creative in the kitchen! They usually come up with way better ideas than I do, like this one today.  We made our own hot pockets and even got to eat them hot!

These homemade versions are great because you can stuff some healthy veggies in the middle, seal them up, and kids just want to eat them!

We used:

Holiday Lunch Fun: Hot Pockets
Recipe Type: Lunch

Prep time: 10 mins
Cook time: 10 mins
Total time: 20 mins
Ingredients
  • 1 Recipe for Pie crust (any recipe you choose or the one I use is not traditional, but a little healthier than shortening)
  • 1 cup whole wheat flour, 1 cup white flour, 1 1/2 teaspoon salt, 1/2 cup canola oil, 1/4 cup milk)
  • 1/2 cup marinara sauce
  • 1 carrot, shredded
  • 1 zucchini, shredded
  • 1/3 cup mozzarella cheese
Instructions
  1. Roll out pie crust and cut large shapes out of them, enough for a top and bottom piece.
  2. In a bowl, mix marinara with shredded veggies.
  3. Place spoonful of marinara and veggies in center of shaped pie crust dough.
  4. Top with mozzarella.
  5. Place second pie crust dough shape on top and seal around the edges.
  6. Place on cookie sheet and bake at 350 for about 10 minutes or until browned.

Do you think these would reheat well? And what about freezing? I would love to make a bunch to send in my sons lunch.

Hi Amy,
I am trying to get my two year old son to eat anything besides fruit chicken nuggets and hot dogs. I have been trying to get my whole family to eat better, but am having a hard time finding things that are kid and adult friendly. Please help! I have done the whole if you don’t eat what I made then you get nothing else and my son doesn’t care…he is very hard headed and knows what he likes and that’s that. Very frusterating…my twin girls were never like this, they eat anything I made and still do for the most part. Thank you.
