Fabulous Friday Food
First thing this morning, headed to the gym. 30 minutes on the bike. There was no way I was going to get on the treadmill after the run yesterday! Also, I needed a good visual of my study guide. I had a Bio Chem test today! Then did upper body weights all on machines. Its so much easier that way, although I feel like I’m not working out hard enough as when I use free weights.
I got home, out of eggs! Bummer! I think I’m getting addicted. The problem (not really a problem) is that the kids love eggs too. We go through a lot of eggs. So instead I had my favorite standby; cereal with yogurt!
Then, I had to get to a meeting for Gold Medal Schools (The health department). So on the way, I ate this protein bar. Its one of the yummier ones! (see my body for life books in the background!!)
I went straight from my meeting To SLCC to take my test (about 40 miles in the opposite direction of my meeting!!) On the way I ate an apple.
Still hungry obviously (apple didn’t do it for me), so I bought this chicken wrap at the college deli (took the photo with my phone)
Got home from the test. I think I did OK.. Maybe B range? I HOPE!! Got home was starving, so didn’t want to “fix” anything. So had cottage cheese, yogurt, and pineapple slices.
Then, when I finally got home, I made this dish! It was so easy! So yummy, so fast! I modified it from the Eating for Life book:
- 1/2 cup fat free mayo
- 1/2 cup sour cream
- dash of cumin
- splash of lime juice
- can of black beans
- can of corn
- can of shredded chicken.
Now that its made, and in the fridge, and I can keep my husband out of it.. it will be a perfect go –to meal that I don’t have to prepare.
Then made this for the family dinner, and it was delicious too! Can you tell I really like my own cooking? Kind of a bad thing, cause I eat everything I make! I could never work in a bakery! Anyway, it was tamale pie. Corn bread, lean ground beef, kidney beans.
That’s it for now. I am NOT working out tomorrow. I am so exhausted from working out this week. Have a great weekend!

It looks great. And lucky you–a day off from working out. I’m doing the Insanity workout regimen, and I workout six days a week for shorter intervals but that sixth day is just murder!! I love my Sunday day off!

I keep having dreams (literally dreaming of it in my sleep) of being a runner. Have you always been?
We love tamale pie here. I have sometimes done just vegetables and beans and canned tomatoes (and tomato sauce and spices) for increasing the veg intake. And I have a strange love for one dish meals. Even though I think it annoys my husband.

Stacey: I started running around 23 years old (right around when I got married). I still don’t consider myself a runner, more like a very slow jogger
I once came in second to last in a 5K Race!
The tamale pie really was good
And the leftovers are great! I have a whole cookbook of one pot meals!!

When I do the elliptical instead of running, I never feel like I am getting as good of a workout, so I know what you mean about the bike. I love eggs, too! I eat them all the time, and never worry about cholesterol or anything bad. I love both chicken eggs and goose eggs! So delicious! I still have never tried your suggestion of yogurt on cereal that you and your children seem to be so fond of. I will have to take the plunge sometime soon! I remember trying those GoLean Roll bars once, and not liking it very much. What is the best flavor? Good luck on your test!!! And your ‘pie’ looks delicious! I am sure I could make a delicious vegetarian version like Stacey mentioned. Do you always take a day off? I take every Saturday off. Otherwise I am pretty sure I would burn out.

I used to never take a day off, and never got burned out. But that is when I realized I wasn’t pushing myself very hard! But now, I’m desperate for the break!

It all looks so good! My favorite dessert/snack is berries and grapenuts with yogurt. You need to get some chickens so you never run out of eggs! We got some chicks this year. I’m looking forward to healthy fresh eggs. It will be our first experience with chickens.
